Slow Cooker Chocolate & Peanut Butter Fudge Cake Recipe

During our time in self isolation, I’ve been searching the internet for good slow cooker recipes I can use. I love that you can chuck everything in and go about your day without a second thought and we really don’t utilise it as much as we should. Anyway, yesterday I came across a tonne of slow cooker cake recipes, cake… in a slow cooker! So I thought, why not give it a bash?

  • 125g of plain flour
  • 100g of caster sugar
  • 1 teaspoon of baking powder
  • 75ml of vegetable oil
  • 1/2 teaspoon of vanilla essence
  • 250ml of milk
  • 340g of smooth peanut butter
  • 4 packets of Rolos
  • 3 tablespoons of unsweetened cocoa powder
  • 250ml of boiling water

In a mixing bowl, mix together the flour, baking powder, milk, oil and vanilla essence until it is smooth. It will be really runny but don’t panic, that’s what it’s supposed to be like!

In the same bowl, stir in your 340 grams of peanut butter until it is fully mixed.

Grease your slow cooker with cooking spray (or a thin layer of butter if you have none) and pour in the mixture evenly.

Press your Rolos into the top of the mix so that they are spread out equally. Due to self isolation problems – I skipped this step as I had no Rolos! Feel free to do the same!

Whisk the remaining sugar and cocoa powder into a bowl and slowly stir in the boiling water.

Gently pour the chocolate water over the top of the cake mix (do not stir).

Cover the slow cooker with a tea towel under the lid and place on high for 2 hours. This stops the condensation from dropping onto the cake!

Serve hot for a dessert like texture (fab with ice cream!) or turn off the slow cooker and leave the lid off whilst you wait for it to set for a proper cake!

Hot pudding – It doesn’t look too pretty but damn it tastes good with a scoop of vanilla ice cream.

As a self confessed peanut butter addict, I absolutely bloody love this, it’s got such a weird but wonderful claggy texture to it. I love that it’s so easy to do and you don’t have to keep going to the oven and checking on it. Plus it’s two desserts in one! I hope you try this recipe and enjoy it too!
